WaterCourse Foods chef Rachel Kesley was in fine form last night with the restaurant’s multi-course Valentine’s Day spread, a steal at $45 per person ($55 with alcohol pairings). We took some photos for you to peruse; keep reading to see what (besides this first course — deconstructed pho, cream of cauliflower and fennel soup, and squash bisque) was on the menu. An appetite-whetter: Chocolate truffle with strawberry balsamic reduction, olive oil and sea salt. Second course: Roasted Brussels sprouts topped with a poached egg and hollandaise. Second course, vegan version: Roasted Brussels sprouts topped with a poached tomato and hollandaise. Another between-courses bite: Vegan cheese-stuffed dates with cookies. First choice of entree: Coffee-rubbed seitan cutlet with truffled mashed potato, chocolate jus, and a shaved-asparagus-and-radicchio salad. Second choice of entree: Miso-poached tofu on a bed of wild rice and Meyer lemon miso broth, with wilted wasabi arugula and grilled asparagus. The grand finale: red velvet cake, chocolate espresso mousse with raspberry lime sauce and apple tart with rosemary ice cream.
