Slow-cooked vegetables are a staple in the Middle East, and while I’m partial to vegetables that are cooked al dente, there’s no denying that the cumin-spiced stew with slow-cooked green beans, tomatoes and garlic from this Middle Eastern joint creates a richly flavored appetizer that could easily become a mainstay in my vegetable repertoire.
