Highland already has Prost Brewing, on the very edge of LoHi. And this month, it’s also scheduled to get Prost Fine Beer and Sausage, an outpost of a Frisco-based restaurant that has no connection to Denver’s Prost…except a mile or so of pavement. The two Prosts have agreed to avoid the litigious name game — but can the new Prost avoid the hipster haters? If Highland can handle sausage and more beer — not to mention two Prosts that seem determined to get along — what else could this neighborhood handle? What would you like to see in the area?
