Ste. Ellie, the long-awaited cocktail bar planned for the space beneath Colt & Gray, will open tonight with a roster of delicious drinks and curated wines and beers.
It was almost two years ago that Colt & Gray owner Nelson Perkins announced his expansion plans: Colt & Gray would be growing into space next door, and in the basement space underneath the restaurant he would also build a brand-new cocktail bar, Ste. Ellie, as well as Viande, a charcuterie kitchen, and two private dining rooms.

Barring complications, Perkins hoped to have all parts of the project finished by summer 2012. But complications quickly piled up, and Perkins had to push his schedule back a couple of times. Finally this spring, Perkins got the project got back on track.

The expanded Colt & Gray dining room opened last month. And after a soft (very) opening, Ste. Ellie will open to the public at 8:30 p.m. tonight with longtime favorite Kevin Burke on staff, along with two other familiar faces: Ryan Conklin and Matty Durgin.
