Today is National Waffle Day, so I did what any self-respecting waffler would do: I ate pancakes. Not just any pancakes, mind you, but a trifecta of flapjacks at the new Snooze, which opened its second location last Friday at 700 Colorado Boulevard.

The new space, just like the original, resembles a set straight from The Jetsons, only the scalloped counter — parakeet yellow — at this second outpost has three times the number of stools, all of which were occupied long after the lunch rush.

The pineapple upside-down pancakes are still perfect, and so is the corned beef hash, which co-owners (and brothers) Adam and Jon Schlegel have been toying with for more than a year: “We had it on the menu, then took it off the menu and just put it back on again because we were able to find a really good corned beef supplier close to the downtown Snooze,” says Jon.

The menu also has a few new pancakes, including carrot, a pulled pork and BBQ eggs Benedict, a caprese Benedict (which sounds weird, but I’ll reserve judgment until I’ve tried it), chicken-fried steak and eggs, and housemade strawberry shortcake dipped in vanilla French toast batter and topped with strawberries and fresh whipped cream.

All of which will no doubt go very well with the joint’s mimosas, although if you over-imbibe, there’s a penalty: “Tabs left overnight due to mimosa indulgence will have an added 18% gratuity,” claims the menu.
