“I’ve been in the food racket for a long time, and I enjoy food and seeking our trends,” says Chip Eakins, who opened Walk-In Burgers at 2255 Sheridan Boulevard, in the former space belonging to Sister’s Pizza and Mussels, on February 18.

“I started traveling quite a bit and realized that burgers were really up and coming, and after eight or nine months looking for a location, I found this space and from what I’ve seen so far, it’s a great addition to this area,” explains Eakins, who previously owned pizzerias and delis in Boulder Country.

The menu is a simple board of all-natural grass-fed burgers; hand-cut fries with housemade dipping sauces; a Chicago-style dog; a few chicken sandwiches, all of which are made with Red Bird Farms chicken; a handful of salads; a hand-crafted, panko-crusted quinoa and veggie burger, and locally made desserts. “We’re using high-quality, healthy, sustainable and local ingredients,” notes Eakins.

He’s still waiting on his liquor license, but hopes to have that in place by the end of March.
